What Does One Do With Quail Eggs??
This is a question I am frequently asked at the market. My usual reply is, "anything you do with a chicken egg, I can do with a quail egg; scrambles, quiches, baking, hard-boiled, pickled, pumpkin custard, and I make a killer eggnog with them".
I had a couple of ladies take the plunge and purchase one dozen each (and scissors; a huge help if you are doing anything other than hard boiling them). They went home and Googled what to do with quail eggs. They were so excited by the possibilities they drove back to the market and bought more!
One thing I decided to try this week was eggs baked in avocado. I found the idea online and ran with it, making modifications to fit our preferences.
For the two of us it begins with 2 avocados (and I should have gone with 1 because this is filling), 4 quail eggs, grated cheese, salsa, bacon (or any meat you prefer), onions, salt, garlic, and butter. I also added some black olives for mine.
Preheat the oven to 350.
Chop the onions and saute in butter to carmelize. Add a sprinkle of garlic powder toward the end of that process if you roll that way.

Split the avocados in half and remove the pit. Scoop out some of the avocado (you can save it for garnish or just go ahead and enjoy it if you are impatiently hungry).
How much you remove depends on your preference but pulling out more than I have in the picture will help the cooking process.
Use the scissors if you have them to open the eggs (if you don't have scissors good luck),
and dump them into the scooped out avocado halves.
Spoon some salsa in with the eggs.
Add the onions you carmelized, the bacon, the cheese, and sprinkle with salt.
Bake at 350 for 10 minutes. After 10 minutes at 350, turn on the broiler to high and broil for 3-5 minutes, depending on your oven and your preference for egg done-ness.
Top with any garnish you prefer; olives, peppers; I think even some pepper jelly would be good (though not carb-free).
Again, depending on your oven and your egg done-ness preference, you may want to cook a little longer or shorter. In my oven at 350 for 10 minutes followed by broiling for 5 minutes, the yolk was soft but set and the white was still a bit loose. Just right for our preference!
Now if I could just grow an avocado tree....
